Sundried Tomato, Spinach and Chicken Pasta

A super easy and delicious pasta dish that is perfect for a weeknight meal or special occasion dinner.

Ingredients

  • 1 lb. fettucine
  • 4 chicken breasts
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons olive oil
  • 8 ounces mushrooms
  • 3 cups fresh spinach
  • 3/4 cup sundried tomatoes
  • 1 1/2 cup heavy cream
  • 1/4 cup parmesan

Instructions

  • Cut chicken into bite size pieces.
  • Season chicken with 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Saute' chicken in 2 tablespoons olive oil for 4-5 minutes, stirring occasionally.
  • Rough chop mushrooms, and tear spinach into small pieces.
  • Add mushrooms and spinach to chicken mixture and cook another 3-4 minutes.
  • Add sundried tomatoes and cook 1 more minute.
  • Add 1 1/2 cup heavy cream and cook 3-4 minutes until mixture slightly thickens.
  • Add 1/4 cup parmesan and cook just until melted and turn heat off.
  • Drain fettucine.
  • Mix fettucine and chicken mixture in large serving bowl.
