Easy White Bean Chicken Chili Crockpot Recipe

This creamy and easy white bean chicken chili crockpot recipe is sure to become one of your family favorites.

Ingredients

  • 1 pound boneless chicken breasts
  • 1 medium onion, chopped
  • 2 cans great northern white beans (drained)
  • 1 can white whole kernel corn (drained)
  • 1 small can chopped green chilis
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 8 ounces chicken broth
  • 12 ounce beer
  • 8 ounce cream cheese
  • 1/4 cup half & half

Instructions

  • Place chicken breasts in bottom of crock pot.
  • Mix salt, pepper, chili powder and ground cumin together in a small bowl, then sprinkle over chicken breasts.
  • Add chopped onion, drained canned beans, drained white corn, and green chilies to crockpot.
  • Next, add chicken stock and beer to the crockpot.
  • Cover and cook on medium for 5-6 hours or until chicken is done and tender.
  • Remove cooked chicken from crockpot and shred using 2 forks.
  • Add shredded chicken back to crockpot.
  • Finally, add 8 ounces cream cheese and half & half.
  • Let cook another 20-30 minutes or until cheese has completely melted.

Notes

Serve with tortilla chips or corn bread. 
Great toppings to use are sour cream, Monterrey Jack cheese, chopped green onions, diced avocados and lime wedges.
Using beer as part of the liquid adds a richer flavor, but you can certainly use all chicken broth if you prefer.
If you prefer a spicy white chicken chili, you can add a dash of cayenne and use hot green chilis.
