Cut chicken into bite size pieces.
Season chicken with 1/2 teaspoon salt and 1/4 teaspoon pepper.
Saute' chicken in 2 tablespoons olive oil for 4-5 minutes, stirring occasionally.
Rough chop mushrooms, and tear spinach into small pieces.
Add mushrooms and spinach to chicken mixture and cook another 3-4 minutes.
Add sundried tomatoes and cook 1 more minute.
Add 1 1/2 cup heavy cream and cook 3-4 minutes until mixture slightly thickens.
Add 1/4 cup parmesan and cook just until melted and turn heat off.
Mix fettucine and chicken mixture in large serving bowl.
